Diabetes and Heart Healthy Recipe

A diet high in fiber has been shown
to decrease cholesterol, improve
blood sugars, and help with weight
management. Try this salad for
lunch or dinner and enjoy the
benefits of fiber!

 

Southwestern Chicken Salad

 

12 oz. cooked skinless chicken breast, chopped
½ red bell pepper, seeded and diced
½ green bell pepper, seeded and diced
¼ red onion, chopped
1 can (15 oz) black beans, rinsed/drained
1 can (8 oz) water chestnuts, diced
½ cup fresh cilantro leaves
½ fresh jalapeno pepper, minced (optional)

Dressing:

2 tbsp. olive oil
2 tsp. orange juice
3 tbsp. cider vinegar
1 tsp. ground cumin
½ tsp chili powder
½ tsp ground red pepper
¼ tsp salt

 

Stir together salad ingredients in a large
bowl. Combine dressing in a small
container with a tight fitting lid. Shake
until salt dissolves. Pour mixture over
salad, toss well.

 

Makes 6 (1 cup) servings
Per Serving: 188 calories, 6g total fat,
1g saturated fat, 15g carbohydrate, 5g
fiber, 20g protein, 284 mg. sodium.
