Orange Beets


1/2 teaspoon grated orange peel

1/4 cup orange juice

1 Tablespoon lemon juice

1/4 cup sugar

1 1/2 teaspoon cornstarch

1/4 teaspoon salt

1 Tablespoon butter or margarine

1 1/2 cups diced beets


Heat grated orange peel, orange juice and lemon juice in double boiler.

Mix sugar, cornstarch and salt together. Add all at once to juice mixture and stir until thickened and clear. Add butter or margarine and beets and heat in double boiler for approximately 15 minutes.

Yield: 6 servings
