Low-Fat Veggie Wrap Sandwiches

2 8-ounce packages of softened fat-free cream cheese

1 package Ranch dressing

1 Tablespoon Dijon mustard

Cream together - thin enough with milk to spread. Set aside.

8 12-inch wheat or white tortilla shells or bread wraps

1 roasted green or red pepper

8 cups salad greens or leaf lettuce

Sliced tomatoes as needed

Sliced mushrooms as needed


Spread flavored Fat-Free cream cheese mixture on entire tortilla shell. Spread 1 cup salad green over cheese layer. Layer with roasted peppers and mushrooms on top of lettuce layer. Place sliced tomatoes across one end of sandwich and begin to roll like jelly roll. Roll tightly. Cut in chunks for appetizers and secure with toothpick or cut in half diagonally for a sandwich.

Makes 8 sandwiches
