Snickerdoodles
Despite the amusing name, these are basic, practically foolproof cookies. Gently dusted with cinnamon and sugar, they're nice along with fresh fruit for an informal dessert.½ cup margarine or butter, softened
1 teaspoon vanilla
2 eggs
2 ¾ cups all-purpose flour
1 teaspoon cream of tartar
½ teaspoon baking soda
¼ teaspoon salt
2 Tablespoon sugar
2 teaspoons cinnamon
Heat oven to 400. In large bowl, combine 1½ cups sugar and margarine; beat until light and fluffy. Add vanilla and eggs; blend well. Add flour, cream of tartar, baking soda and salt mix well.
In small bowl, combine 2 Tablespoons sugar and cinnamon. Shape dough into 1-inch balls; roll in sugar-cinnamon mixture. Place 2 inches apart on ungreased cookie sheets.
Bake at 400 for 8 to 10 minutes or until set. Immediately remove from cookie sheets.
Yield: 4 dozen cookies
