Honey-Peach Bran Muffins

Besides tasting delicious, these muffins provide a nice fiber bonus.
Substitute your choice of fruit and fruit yogurt for a versatile variation.



½ cup all-purpose flour

¾ cup whole-wheat flour

¼ cup wheat bran

1 teaspoon baking powder

1 teaspoon baking soda

1/8 teaspoon salt

1 teaspoon ground cinnamon

¼ cup honey

1 egg slightly beaten

1 (8-ounce) carton peach low-fat yogurt

¼ cup oil

½ cup peaches canned in extra-light syrup, drained well and coarsely chopped


In a large bowl, combine flours, salt, bran, baking powder, baking soda, and cinnamon.

In a small bowl, combine honey, egg, yogurt and oil. Stir well. Add to dry ingredients. Stir until just moistened. Add peaches. Spoon batter into muffin cups sprayed with vegetable cooking spray, filling 3/4 full. Bake at 350 degrees for 18 to 20 minutes or until lightly browned.

Makes 12 muffins.

Per serving: 114 calories; 3 grams protein; 21 grams carbohydrates; 3 grams fat (21%); 1 milligram cholesterol; 143 milligrams sodium.
