Hazelnut Melting Moments


Hazelnuts, also called filberts, lend distinctive flavor to this variation of the cookies sometimes known as Russian Tea Cakes or Mexican wedding cakes. To grind the nuts, process them in a food processor or blender with brief on-and-off turns; over processing will result in nut butter.

2/3 cup sugar substitute

1 cup butter, softened

2 teaspoons vanilla

1 teaspoon grated lemon peel

1 egg yolk

2¼ cups all-purpose flour

1½ cups ground hazelnuts (filberts)

½ cup sugar-free jam

Heat oven to 325 degrees. In large bowl, combine sugar substitute and butter; beat until light and fluffy. Add vanilla, lemon peel and egg yolk; blend well. Add flour and hazelnuts; mix well. Shape into 1¼ inch balls. Place 2 inches apart on ungreased cookie sheets. With thumb, make indentation in center of each cookie.

Bake at 325 degrees for 10 to 15 minutes or until light golden brown around edges. Cool.

Fill cavity of each cookie with ½ teaspoon sugar-free jam.

Yield: 4 dozen cookies
