Coffeecake
2¼ cups flour
¾ cup sugar
2¼ teaspoons baking powder
¾ teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon salt
¾ cup margarine
2 eggs
¾ cup milk
¾ teaspoon vanilla
3 cups fruit pie filling of your choice (blueberry works well)
6 tablespoons sugar
6 tablespoons flour
3 tablespoons margarine
1. Preheat oven to 300° F.
2. In a mixing bowl, stir together flour, sugar, baking powder, cinnamon, nutmeg and salt. Cut in margarine until mixture resembles fine crumbs.
3. Combine eggs, milk, and vanilla; add to flour mixture and mix until well blended.
4. Spread half of batter in greased 13” x 9” pan. Spread fruit topping over batter; spread remaining batter over fruit topping.
5. Combine sugar, flour, and margarine; blend until mixture resembles coarse crumbs. Sprinkle mixture over batter in pan.
6. Bake at 300° F for 30 to 40 minutes.
