Coconut Pineapple Squares


½ cup margarine or butter
2 tablespoons sugar
1¼ cups flour
1¼ cups crushed pineapple, drained
1 large egg
½ cup sugar
4 teaspoons melted margarine or butter
2 cups grated coconut


1. Cream together the ½ cup margarine or butter and 2 tablespoons sugar, then add flour ¼ cup at a time while mixing on low speed. Increase to medium speed and blend for 15 seconds.

2. Spread dough evenly with fingertips in an 8” x 8” square pan. Work dough up ½ inch around sides of pan. Prick dough with a fork. Bake at 350° F for 15 minutes. Remove from oven.

3. Spread pineapple over crust.

4. Beat egg on high speed until light and foamy. Add ½ cup sugar to beaten egg and mix well.

5. Stir the 4 teaspoons melted margarine or butter and coconut into egg mixture. Place in four corners and center on top of pineapple and crust. Spread evenly from these points. Return to oven and bake until topping is golden brown for 20-25 minutes at 350°.
