Reuben Casserole

Yield: 12 servings
4 cups sauerkraut, drained
½ cup onions, chopped
½ cup parsley, chopped
1½ tsp caraway seeds
Combine above ingredients in a bowl; mix well. Layer mixture in the bottom of a 9 x 13 pan.
Place 2 cups shredded Swiss cheese on top of mixture.
Top cheese with ¼ cup 1000 Island Dressing.
On top of dressing, place 1½ lbs. Corned beef, cooked and thinly sliced.
Top Corned Beef with ¼ cup 1000 Island Dressing.
Toss together 4 cups cubed Rye bread (½” cubes) and ½ cup melted butter or margarine, and sprinkle over dressing.
Top entire casserole with 2 cups shredded Swiss cheese.
Bake in 375° F oven for 35 minutes or until heated through.
